Engaged!




































Last night Byron and I hosted Boxing Day dinner for his family at our own little house. It was lovely to eat leftovers and some homemade mince pies, gather around the tree and exchange gifts. I love Boxing Day, for me it's like Christmas Day without the commercialism or the stress. Everyone is much more relaxed and rested. 

Once everyone had gone home, Byron surprised me with another gift. A ring, THE ring, and asked me to marry him. It was truly beautiful and the perfect proposal, understated, simple and so very us. He chose the ring from an independent seller and it was made just for me, blue Labradorite - not diamonds as I don't want to contribute to that industry - which apparently has magical properties. Basically, I am that much closer to becoming a real life Hufflepuff!

Five Happy Things




































Last week was really chaotic, at work the GCSE mocks started so there was lots of seriously stressed out students needing someone to vent to. As most of us TA's were on a mock timetable the week felt like it went pretty quickly, sometimes it's really nice to do something different. I'm pretty sure my Year 11's felt differently though.

1. Birmingham German Market. My second market in a week and just as enjoyable as the first. We arrived in Birmingham around 10.30 while it was still relatively quiet so got to look around without being elbowed too much.

In Pictures: York




































When my Mum called and asked if I wanted to go to York for Christmas shopping last Saturday I jumped at the chance. You see, I have never actually been to York, despite hearing and seeing some wonderful things about the city. A day with my Mum visiting the Christmas markets was going to be great, even if it did mean getting up at 7am on a Saturday. We started the day off with my Mum's very first Gingerbread Latte, her verdict: pretty good and not as sweet as she thought it would be.

Exploring Derby: The Good Green Cafe















































I have lived in various parts of Derby and Derbyshire for the past 7 years, since I have moved into the city again I am making an effort to get out and explore. I am particularly interested in discovering more independent shops and cafes and The Good Green Cafe on Sadler Gate has quickly become a favourite of mine.

Chocolate Cupcakes















































This has been my go to chocolate cake recipe for the last couple of years, I even doubled the recipe to make a layer cake for my birthday. It is moist and chocolatey and pretty much everything you want in a cupcake. These are also good with added chocolate chips so go crazy.

Peanut Butter Cookies



































We celebrated my Dad's 46th birthday last weekend, happy birthday Dad! My Dad doesn't really like cake so I set to work on something I knew he would prefer, a peanut butter cookie. I added the dark chocolate because it's a favourite and a lovely combination but these work just as well plain if that's your preference. These are gluten, dairy and refined sugar free and no-one could tell which means they are almost good for you and tasty as well!

Coconut Oil 5 Ways




Coconut Oil. It's everywhere at the moment and if you type the words into Google you will probably find 1001 ways to use it. When my Mum gave me my first tub last year I did just that and honestly, it was pretty overwhelming. Saying that, if someone told me I was going to a desert island and could only take one product, Coconut Oil would be top of my list. It really is a wonder product and over the past year I have started to use it in more and more ways.
